You Can Cook with Lavender?

Mountain Farm, one of our wonderful product makers at the Home of the Perfect Christmas Tree Store, has a fabulous lavender and goat farm just a few minutes away. Mountain Farm's Marilyn Cade says that lavender grows amazingly well here and they are constantly inspired to create new delicious culinary lavender products. They offer wonderful recipes in their cookbook "A Taste of Lavender" sold at the HPCT Store and online. We thought we would share one of their recipes with you! (By the way the cookbook comes with a pouch of lavender to get you started with your recipe!)

Lavender Honey Oatmeal Cookies

3 tablespoons butter, room temperature

1/2 cup brown sugar

1/4 cup Mountain Farm Lavender Honey (you can purchase this at the HPCT Store!) or you can use regular honey

1 egg

1 tablespoon lavender flowers (included in your recipe book)

1/2 cup all-purpose flour

1/4 teaspoon salt

1/4 teaspoon baking soda

1 1/2 cups rolled oats

Preheat the oven to 350 degrees. Spray a cookie sheet with nonstick cooking spray, or use parchment paper.

Using a mixer, beat together the butter, brown sugar, honey, egg and water thoroughly.

Mix together the dry ingredients including the oats and lavender.

Combine the wet and dry ingredients.

Drop heaing teaspoonfuls onto the cookie sheet and bake for 12-15 minutes.

Cook on a wire rack. Enjoy!
